I really love this "Pea Sprout & Cabbage Shio-koji Salad",. I thought the pea sprouts would taste delicious with some other fresh and simple ingredients, so I made this recipe with a couple adjustments to the seasoning.Carrot peel contains lots of carotene which supposedly helps to prevent cancer!I recommend using unpeeled carrots with a smooth and clean skin.The carrots do contain an enzyme that destroys Vitamin C, but if you heat them up or sprinkle some lemon juice or vinegar over them it seems to keep the enzyme at bay. This salad is indispensable for me along with the potato salad whenever I prepare stuffed tomatoes and deviled eggs.But it is also an excellent combination with any kind of meat.

This is a twist on carrot salad. I needed something a bit different and began experimenting with other ingredients. When left to marinate the flavors marry perfectly!

I sometimes add tuna and add a little more mayo...serve over a bed of lettuce for a meal.

It's really great with grilled dishes and, of course, pizza.

Julienne apple and carrot with yoghurt dressing. I like to have this fruity and crunchy summer salad with baked chicken, grilled salmon, fresh greens, sandwiches and so on. I used cottage cheese this time but I also like it with feta cheese on top!
