I used to buy fish pie as a ready made meal until I realised how simple it could be to make it home! This is my first attempt to make a homemade one for packed lunch and it was so delicious!

I used to buy fish pie as a ready made meal until I realised how simple it could be to make it home! This is my first attempt to make a homemade one for packed lunch and it was so delicious!

Ingredients

1 hour 30 minutes
4 servings
  1. 250 glasagne sauce (or you can make homemade white sauce)
  2. 3 piecescod fish fillet boneless
  3. 1small handful of fresh or dried dill
  4. 1/2 tspgarlic powder
  5. Ground black pepper
  6. Grated cheese
  7. Salt to taste
  8. 1 packetfresh spinach washed
  9. Oil
  10. Mashed potato
  11. 4medium potatoes peeled and washed
  12. 100 mlmilk (change according to preference)
  13. 1 tbspbutter
  14. 1 tspsalt
  15. 1 handfulgrated cheddar cheese
  16. Homemade white sauce
  17. Flour
  18. 1egg
  19. Butter
  20. Milk

Cooking Instructions

    To make the mashed potato, chop the potatoes into 1/4. Boil the potatoes in a pot until you can poke a fork in the potatoes (roughly 15 minutes)

    Peel the potatoes if you haven’t done so. I usually peel the potatoes after it’s boiled so it’s easier to peel. Pre heat the oven to gas mark 6.

    In the same pot, melt the butter, add the milk, cheese, and potatoes then use the potato masher to mash everything together. Add 1 tsp of salt to taste if you prefer having slightly less butter then you have your mashed potato then season with as much ground black pepper as you prefer.

    In a skillet, lightly cook your spinach leaves then drain the excess water using your hand and colander. Wipe the pan using a tissue so you don’t get the excess water in your pie.

    In the same skillet, shallow fry your cod fish fillet until it is cooked then break it into bite sized pieces. In a separate pot make your white sauce if you haven’t done so.

    Add your white sauce to the fish along with the dill, garlic powder, and ground black pepper and let that cook for 15 minutes. Add the spinach to the last 5 minutes of your fish being cooked in the white sauce.

    Get an oven tray and spray some oil on the tray then brush it to spread it out evenly.

    Add your fish mixture followed by the mashed potato on top and spread it evenly.

    Grate as much cheese as you like and spread that on the mashed potato. Place the tray in the oven and let the pie cook until it is golden brown (roughly 20 minutes)
