I ran out of veggies and had already washed the beans.Then,I thought 'why not blend it white before they go get them'? Well,I did so and it turned out great alongside a pepper sauce.

I ran out of veggies and had already washed the beans.Then,I thought 'why not blend it white before they go get them'? Well,I did so and it turned out great alongside a pepper sauce.

Ingredients

  1. 2 cupsbeans
  2. salt

Cooking Instructions

    Soak the beans for 10mins and scrub continuously till all the chaff is out

  2. 2

    Add a little water and blend into a soft batter

  3. 3

    Add a pint of salt

  4. 4

    Pour half a cup of batter in a polythene bag and tie properly

  5. 5

    Repeat the above step till the batter is finished

  6. 6

    In a pot,boil some water

  7. 7

    Put the bags in the water and let to cook for 40mins

  8. 8

    Empty the polythene bags into plates

  9. 9

    Serve hot with any sauce of your choice

  10. 10

    Enjoy!!!

We call this Ekuru/Ofunloju here in Southwest, it is best paired with agidi and pepper sauce garnished with locust beans,smoked fish, ponmo and sources of protein of your choice. I don't add salt before cooking it though. I just soak, remove the chaff and blend thereafter. Some people add salt to the ekuru before eating but i eat mine without adding the salt.
