Ingredients

  1. 3 cupsrice
  2. 1 cupgreen beans
  3. 1 cupcarrots(diced)
  4. 3medium green pepper(diced)
  5. 7scotch bonnets(grated)
  6. 4large red bell peppers(grated)
  7. 2large onions(sliced)
  8. Meat
  9. 1/2 cupmeat stock
  10. 2 tspcurry powder
  11. 1/2 tspthyme
  12. 1/2 tspdried parsley
  13. 1/2 tspblack pepper powder
  14. cubesSeasoning
  15. 1/2 tspjollof mix
  16. Salt to taste
  17. Veg oil
  18. Hot water

Cooking Instructions

    Parboil your rice and keep aside. Cook your meat with seasoning, spices and curry, fry it and keep aside. Heat up oil and add onion. Saute for 2 mins, then add grated peppers and fry for 3mins. Add veggies and stir fry for some minutes.

    Add seasoning, spices and curry,continue stirring.

    Add meat stock, meat and pour in hot water enough to cook the rice. Then add in your parboiled rice. Stir, cover and allow it to simmer and cook completely.

    When it's done, turn off the flame and serve.
