Ingredients

30 minutes
4 servings
  1. 2 cupcooked (90%) long grain basmati rice,
  2. Veggies
  3. 1/4 cup chopped beans,
  4. 1/4 cup finely diced carrot 🥕,
  5. 1/4 cupfinely diced bell pepper (all 3),
  6. 1/4 cup sweet corn 🌽,
  7. 1/2 cup shredded cabbage,
  8. For Scrambled Egg
  9. 3 eggs,
  10. 2 tbspoil,
  11. as required Salt to taste,
  12. 2 green chilli chopped finely,
  13. 1 tsp chopped spring onion greens,
  14. 2 tbspoil,
  15. 1/2 cupchopped onion,
  16. 1 tspgrated garlic,
  17. 1 tspgrated ginger,
  18. 2green chilli slitted,
  19. 1 tsplight soya sauce,
  20. 1 tspvinegar,
  21. 1/2 tspblack pepper powder,
  22. as requiredSalt to taste,
  23. some chopped spring onion greens,

Cooking Instructions

30 minutes

    Wash the veggies, keep aside. Take a mixing bowl, crack eggs, add lil salt & black pepper powder, whisk them, keep aside.

    Take a pan, add oil, heat it. Add whisked eggs. Now add green chilli & few spring onion greens. Start mixing it gently until almost cooked.

    Take a wok, add oil, heat it. In goes onion, saute it for 30 sec. Add ginger garlic, saute it for 30 sec. Do not brown it. In goes green chilli, stir it.

    Now add all the veggies one by one, stir fry it for a minute. Add lil salt, mix it well.

    In goes rice, mix it well. Add soya sauce & vinegar, mix it well. Sprinkle lil black pepper powder, mix it well.

    Add cooked egg now, mix it well. Cook it for a minute.

  7. 7

    Turn off the flame, take out in a serving dish, garnish it with a dhania sprig.
