Halloween Spider Web Green Pea Soup

I made a soup out of some boiled green peas that I froze in the summer, then dressed it up with a spider web for a touch of Halloween!

The firmness of the cream cheese for the pattern is the key point. If it's similar to un-whipped heavy cream, it will melt in the soup, so use a little milk with the cream cheese to adjust the firmness. Since the firmness of the cream cheese depends on the brand, start out with a small amount of milk.

Ingredients

30 mins
4 servings
  1. 200 gramsgreen peas
  2. 150 gramsWater
  3. 200 gramsMilk
  4. to tasteSalt and pepper
  5. 10 gramsButter
  6. 1/2Onion (finely sliced against the grain)
  7. 1soup stock cube or bouillion cube
  8. For the spider web:
  9. 10 gramsCream cheese
  10. 1 tspMilk

Cooking Instructions

30 mins
  1. 1

    Parboil the green peas.

  2. 2

Melt butter in a pot, and sauté thinly sliced onion and green peas.

  3. 3

Add 150g water and boil until onion and green peas are very tender. Add a little more water, if necessary.

  4. 4

Add a stock cube to the pot, and after it dissolves, purée the soup in a blender.

  5. 5

Return the soup to the pot, add milk, and stir consistently to keep the soup from burning. Add salt and pepper to taste.

  6. 6

Put ingredients for the spider web pattern into a sturdy plastic bag (such as a zip-lock bag), and heat in microwave for 10 seconds.

  7. 7

Mix together the ingredients from outside the bag, and adjust the amount of milk depending on the softness, then reheat in the microwave. It should reach the firmness of 80% stiff whipped cream. Be careful not to burn yourself!

  8. 8

Once the cream is smooth enough and there are no more lumps, cut a very small hole in the corner of the bag, and, as if using a decorating bag, pipe a spider web pattern on top of the soup in serving bowls.

  9. 9

To make the spider web pattern: starting in the center, create a spiral moving outward, then, using a toothpick, draw about 6-8 radiating lines. Children will love helping with this step.
