Ingredients

  1. 30 ouncescanned mackerel
  2. 1 cupbell pepper and onion mixed 1 yellow and orange bell pepper
  3. 1 teaspoontarragon
  4. 1 cupself rising flour
  5. 1 cupbuttermilk cornbread mix
  6. 3/4 cupmilk
  7. 1 tablespoonrice vinegar
  8. 2large eggs divided
  9. 1/4 cupwater for egg wash
  10. 2 cupspanko breadcrumbs
  11. 1 teaspoongranulated garlic powder
  12. As neededpeanut oil to deep fry in

Cooking Instructions

    Mince the peppers and onions use equal amounts of each. Take one egg and mix with water making an egg wash, set aside.

    Set aside the pepper and onion mixture. You will only need 1 cup of this mixture. Drain the mackerel. Here comes the hardest part of the recipe. Remove the bones. They are brittle and thin.

    Finally the bones are out. Add the rest of the ingredients, just use 1 egg here, in the bowl, and combined.

    Make a production line. Mixture, egg wash, and breadcrumbs.

    Form the mackerel Devil Rolls into a little football shape. Dip and coat in the egg wash. Roll in the breadcrumbs. Put the rolls in the freezer for 30 minutes.

    Heat the oil to frying temperature around 370° Fahrenheit. When done move to paper towels to absorb excessive amounts of oil. Start the next batch till done.

    Let them rest, they will drain the oil off of them on to the paper towels. Serve, I hope you enjoy!!!!!
