Shira-ae (Mashed Tofu with Spinach and Konnyaku)

I arranged shira-ae, a standard washoku or traditional Japanese dish for my daughter. This is a family favorite!

Cooking Instructions

Blanch the spinach in plenty of boiling water until wilted, then drain and rinse in cold water to get rid of the bitterness. Drain the excess moisture from the tofu very well.

Cut the vegetables and konnyaku into bite size pieces and simmer in the combined * ingredients for about 3 minutes. Let cool in the cooking liquid to flavor the ingredients.

Put the tofu mixture ingredients into the food processor and pulse.

When it's smooth, it's done.

Cut up the cooked and tightly drained spinach from Step 1 into bite-sized lengths, drain the vegetables and konnyaku from Step 2 very well, and mix together with the tofu mix.

Taste, and if it needs more flavor, adjust by adding some of the remaining cooking liquid or adding sugar (I've kept the flavor light to let the the taste of the tofu shine through).

Arrange in a bowl, sprinkle with ground sesame seeds, and it's done.

I love shira-ae, but grating the ingredients in a mortar and flavoring takes quite a bit of effort. I started using silken tofu rather than firm tofu to be able to make this more easily.Crushing it with a whisk makes it very smooth. It goes great with miso.Wringing out the mentsuyu gives flavor and also keeps the dish from becoming watery.For the tofu dressing, mix the tofu using the whisk as if to crush the tofu. My aunt on my mother's side lives in Yamagata prefecture and she sends me persimmons every fall. I recreated my mother's recipe, which was a staple at my parents' household. My mother usually combined julienned persimmon with peanuts, but I like the astringency of walnuts, so I used them. It's also good with peanuts.I suggest you use persimmons that aren't astringent and are seedless. If using the seedless variety, peel the skin and julienne for ease. If you use a ripened persimmon, its softness may be difficult to cut but it'll be sweet and be delicious for this.
