Easy with Pancake Mix Tofu and Roasted Soy Flour Cake

I had leftover soy flour, so I made this.

It doesn't become creamy like pancake dough. It's OK if the dough has some lumps in it.
Let it harden in the fridge, then heat it in the microwave for 30 seconds for the best taste. For 1 15 cm [5.9 in] cake mould. Recipe by Nekonokaasan

Ingredients

4 servings
  1. 100 gramsPancake mix
  2. 240 gramsSilken tofu
  3. 20 gramsKinako
  4. 1Egg
  5. 45 gramsBrown sugar (white sugar is OK too)

Cooking Instructions

    Pre-heat the oven to 340°F/170°C.

  2. 2

    Drain the tofu, place in a bowl and crush with a whisk.

  3. 3

    When the tofu has become smooth, add the egg and mix.

  4. 4

    Add the sugar, pancake mix and soy flour, and whisk until everything has fully blended together.

  5. 5

    Pour it into a mold lined with baking paper and bake for 25 minutes at 340°F/170°C. Cover with foil half way through to make sure the surface doesn't burn.
