Today is the day before a long holiday. I wanted to use the tofu and eggs in the fridge to make my children some snacks.

I bought 3 packs of 70g tofu and used one to bake my regular super-easy pound cake that uses pancake mix. You can use any kind of tofu, whether it may be silken or firm. For two loaf pan: 16 x 7 x 6 cm [6 1/4 x 2 3/4 x 2 1/4 in]. Recipe by keikana

80 gramsMargarine
80 gramsSugar
70 gramsTofu
3Eggs
200 gramsPancake mix

Steps

Preheat the oven to 180°C (360°F). Grease and flour the mold or line with parchment paper.

With a spatula, mix margarine and sugar in a bowl. Add tofu, eggs, and pancake mix in order. Stir thoroughly.

Pour into the mold. Bake in the preheated oven for 30 to 40 minutes to finish.
