Ingredients

1 loaf
  1. 11⁄2 cups flour
  2. 11⁄4 cups yellow cornmeal
  3. 3⁄4 cup sugar
  4. 1⁄2 teaspoon baking powder
  5. 1⁄2 teaspoon baking soda
  6. 1⁄2 teaspoon salt
  7. 2eggs
  8. 1⁄2 cup melted margarine or 1/2 cup corn oil
  9. 1 cupbuttermilk or 1 cup sour milk
  10. 1 cupfrozen corn kernels, thawed

Cooking Instructions

    Preheat oven to 350-degrees F. Spray 9 x 5-inch loaf pan with cooking spray and dust with corn meal.

    Mix first six ingredients (flour- salt) in large bowl.

  3. 3

    Mix eggs, melted margarine/oil, milk in small bowl. Stir until combined.

    Add egg mixture and corn to dry ingredients. Stir until combined.

  5. 5

    Pour batter into pan. Bake for one hour.
