Quick Sev Sabzi (without tomato)

My own version of Classic Sev Tamatar.

Ingredients

2 servings
  1. 1 cupsev
  2. 1/4 tsp red chilli powder
  3. Salt to taste
  4. 1/4 tsp turmeric powder
  5. 1/2 tsp coriander powder
  6. 1/4 t.sp. kanda lasun masala (or use kitchen king masala or garam masala)
  7. Few chilli flakes and Kasuri methi dried leaves crushed to garnish
  8. 1 pinchhing
  9. 1/2 tspn ginger paste or crushed ginger in mortar pestle
  10. 1/4 tspcumin seeds
  11. 2 tspnoil
  12. 1/4 tspn amchur powder or 1/2 lemon squeezed

Cooking Instructions

    First mix all the powdered spices and ginger paste with a little water in a bowl.

    Now heat the oil in a pan. Add cumin seeds. As it crackles, add hing.

    Add prepared masala water. Cook for a few minutes till oil separates.

  4. 4

    Add sev and kanda lasun masala. Stir and mix. Add water as needed.

  5. 5

    Simmer and cook for another few minutes till it becomes thick.

  6. 6

    It's ready. Add lemon juice and garnish with coriander leaves/kasuri methi or dried chilli flakes. Serve with roti/paratha.
