Cabbage with Cashew Butter Dressing

I usually use sesame paste, but I decided to make it a bit fancier with cashew butter!

I originally planned to make a sesame dressing, but I only had cashew butter in the fridge. It turned out to be richer, and I thought it was a nice change.

Cooking Instructions

Remove the core from the cabbage and cut it into bite-sized pieces. Boil in salted water (not listed in ingredients) for about 2 minutes if you prefer it slightly firm.

Drain the cabbage in a colander and cool it under running water. Squeeze out excess water well.

In a mortar, combine all ingredients except the cabbage and mix well. Toss with the cabbage.
