Ingredients

Serves 2 servings
  1. 1/3medium cabbage
  2. 2 tablespoonscashew butter
  3. 1 tablespoonvinegar
  4. 1 teaspoonsugar
  5. 1 teaspoonsalt
  6. 1 teaspoonsoy sauce

Cooking Instructions

    Remove the core from the cabbage and cut it into bite-sized pieces. Boil in salted water (not listed in ingredients) for about 2 minutes if you prefer it slightly firm.

    Drain the cabbage in a colander and cool it under running water. Squeeze out excess water well.

    In a mortar, combine all ingredients except the cabbage and mix well. Toss with the cabbage.
