I used a gift of Spanish olive oil and paired it with my favorite fresh scallops and a Japanese-style sauce for a refreshing dish.
Cooking Instructions

I used umeboshi plums pickled with shiso and 8% salt content.

Mix the olive oil with the umeboshi paste and grated garlic thoroughly.

Mix all remaining ● ingredients to complete the umeboshi sauce.

Slice the scallops in half horizontally. Serve with your choice of vegetables, such as baby greens, and drizzle with the umeboshi sauce to finish.
