Serves 2 to 3 servings

6scallops (sashimi-grade)
as neededWatercress (or your choice of greens),
1 tablespoonlemon juice
1/2 teaspoonwhole grain mustard
1/4 teaspoonhoney
1 pinchsugar
1/2 teaspoonolive oil
Salt and pepper, to taste
Black pepper, to taste

Pat the surface of the scallops dry with a paper towel and slice them. Mix the ● seasonings together.

Arrange the watercress and scallops, cut to an appropriate size, on a plate. Drizzle with the mixed seasonings and sprinkle with black pepper to taste. It's ready to serve.
