Ingredients

45 minutes
4 servings
  1. 3-4 cupsbroccoli well chopped
  2. 1 cupdiced onion
  3. 1 cupdiced carrots
  4. 2 cupsvegetable stock
  5. 1 cupday old rice
  6. 1 cuphalf n half or heavy cream
  7. 1 cupColby Jack Cheese
  8. 1 tablespoonminced garlic
  9. 1/2 teaspoonsmoked paprika
  10. 1/2 teaspoonmustard powder
  11. 1/2 stickbutter
  12. 3/4 cupflour

Cooking Instructions

45 minutes
  1. 1

    Melt butter in your soup pot and stir till onions and carrot is soft.

  2. 2

    Add flour and then spices. Stir together until you can not see any white of the flour.

  3. 3

    Add your veggie stock to the pot and then add your chopped up broccoli. Stir, cover over low heat for about 25 minutes.

    Add cheese to the soup and recover. Wait about 5 min or until the cheese is well blended.

    Add your cream or half and half to the soup and then add leftover rice. Stir, cover, and remove from heat.

    Wait about four minutes or so covered then stir again and enjoy.
