Ingredients

6 to 8 servings
  1. 1 lbdry pinto beans
  2. 1red onion quartered and halfed
  3. 1jalapeño seeded an diced small....I will share a trick about cooking with jalapeños rinse for at least 2 minutes to remove heat 🥵 but not flavor
  4. 1/2 packBacon 🥓 diced small
  5. 1/2 packpork Chorizo
  6. 2 cansfire roasted diced tomatoes with chili's
  7. 1 canChipotle peppers 🌶 in Adobo 🔥 sauce ⚠️ ONLY USE ONE CHOP SMALL ⚠️NOT EVERYONE WANTS THE HEAT
  8. 1Jalapeño seeded an clean and rinsed.....split
  9. 1 BUNCHCilantro chopped
  10. 1 tspcummin
  11. 1/2 tspSmoked paprika
  12. 1 tspfresh Mexican aka Cuban oregano
  13. 1lime Zested and Juiced

Cooking Instructions

    I used the quick soak method for beans, bring to a boil for 2 minutes, remove from heat for 1 hour. Then return to a boil

    In a skillet cook BACON 🥓 and pork Chorizo, red onion and 1 Jalapeño diced small

  3. 3

    Fun time, everyone in the Pool, scrap the skillet into the bean pot and all the remaining ingredients except the second jalapeño

    While you wait for everything to blend the flavors together. Take a small skillet add a TBSP OF BUTTER COOK YOUR JALAPEÑO ON BOTH SIDES BLISTER IT.....THAT'S 4THE COOK.....ENJOY
