A fiber-rich bean dish! How about trying Texas-style pork beans from the western US?
The origin of this recipe: A friend from Texas taught me this recipe, and after returning to Japan, I tried making it with ingredients available here. The types of beans are a bit different, but I've adapted it with what's available in Japan. I love this delicious, fiber-rich Texas bean dish!

Ingredients

Serves 2 servings
  1. 1 cancanned beans, preferably red kidney beans (any type like pinto or chickpeas is fine)
  2. 1/2bell pepper
  3. 1/2onion
  4. About 3 1/2 oz bacon (preferably in a block, but slices are fine)
  5. 2 teaspoonschili mix powder
  6. 2 tablespoonsketchup
  7. 1 teaspoonmustard (Japanese mustard is also fine)
  8. 3/4 cupwater (if the beans lack moisture)
  9. Beef bouillon (choose one from below *)
  10. 4 tablespoons*Soup made from brisket
  11. 1*Bouillon cube dissolved in 3 1/2 oz water
  12. Salt and pepper to taste
  13. Tabasco to taste, if desired

Cooking Instructions

  1. 1

Dice the bell pepper, onion, and bacon into bite-sized pieces, similar in size to the beans.

  2. 2

Place the bacon in a frying pan and cook until the fat is rendered, being careful not to burn it. Do not make it crispy! Wipe off some of the excess fat.

  3. 3

Add the bell pepper and onion to the bacon and sauté lightly.

  4. 4

Reduce the heat to low, add the mustard, chili mix powder, and ketchup, and sauté lightly.

  5. 5

Add the prepared beef bouillon and canned beans to the mixture. If there is no moisture, add enough water to cover all the ingredients.

  6. 6

Cover and simmer on low heat for about 20 minutes, allowing some of the moisture to evaporate.

  7. 7

Taste and adjust with salt and pepper. If you like it spicy, add Tabasco and it's ready to serve!
