The Basic Omelet

I love eggs. But I’m really weird about them. I don’t like them browned at all. Makes them smell like burnt hair. This one actually has a hint of brown on it🤢😂 If I see someone scrambling eggs, and it’s stuck to the sides, I want to run gagging and screaming. What a stinking waste…literally. So my suggestion is LOWER HEAT. Less is more in the egg realm. Weirdly, I only like American cheese in my omelette or scrambled eggs. I’m not very cultured😂😂🩷 this is nothing really but to know how to make a good egg is priceless.

Ingredients

Less than 5 minutes
1 serving
  1. 2eggs, beaten in a cup with a fork
  2. 2 tbspbutter
  3. Salt to taste (season them your way)
  4. Sliced American cheese singles (use what you want)

Cooking Instructions

Less than 5 minutes
  1. 1

I prefer to use a nonstick skillet. On med/low heat melt your butter. Pour your beaten egg in. I use a skillet the size I want my omelette.

  2. 2

As the egg starts to cook, pull the edges back with your spatula and allow the raw egg to fill it back in. This allows it to cook evenly. It also thickens your omelette. I add salt at this point.

  3. 3

When the surface is almost cooked through, lay your cheese on on one side. Leave a little border to allow for oozing cheese. Break up the cheese if you need to. Using your spatula, flip the empty side over onto the cheese side. Then flip the half circle over to finish the other side.

  4. 4

Slide that baby onto a plate. I suggest allowing it to cool a bit. It’s like lava 🔥

I'm an army brat with a Cajun mother and an Irish dad. I'm married to the love of my life, David, and we have 2 daughters and 2 grandchildren. I've been a barber for 40 years. Im an old fashioned, old school cook and my recipes are basic. I change them up all the time.Since finding out I’m diabetic I’ve had to rearrange old habits. Any recipe I have can be made the old fashioned way OR replaced with lower carb options. Just ask and I’ll tell you what has worked for me.I’m the self proclaimed queen of the leftover. I have issues with leftovers looking back at me with the same sappy look they had the day before. Can’t do it. My super power is turning what I find in my fridge into something I want to eat. I work so much better under pressure. I live for shortcuts and not having to run to the grocery every day. Work with what you have. Adapt and overcome. Also, the less dishes, bowls, and pots I hafta use, the better. Hope some of these recipes work out for ya!
