Just a simple recipe i came up with to use up some extra eggs and bacon
Cooking Instructions

Preheat oven to 350 degrees.

Place eggs, milk, bacon and seasoning in a blender. Blend for 5 seconds

Mix the cheese into the egg mixture
- 4
Spoon into two 6-muffin tins or one 12-muffin tin, filling about 3/4 full
- 5
Place muffin tin/s into the oven and cook for about 15 minutes
- 6
Remove from oven, top with a little shredded cheese and let set 3-5 minutes.

Remove from pan and place two omelet rounds on a bed of salsa. Top with a dollop of sour cream and a sprinkling of chives or parsley

Work great as a stand alone or serve with toast, potatoes, fruit, or whatever you like
