Carrot & Orange Salad

There are many recipes for this popular salad. Some people add Onion and Parsley, but I don’t. Some people use Orange Juice to dress the salad, but I believe it lacks sourness. This is how I make Carrot & Orange Salad. I like it simple so that I can enjoy the flavour of Carrot and Orange.

Cooking Instructions
- 1
Cat Carrot into thin strips. Using a vegetable slicer, it would be easy to do.
- 2
Place Carrot in a mixing bowl, add Salt, Black Pepper, Olive Oil (OR Oil of your choice), Lemon Juice and Sugar, mix well, and set aside.
- 3
Remove the peel of Orange and cut the Orange in your favourite way. You may prefer cutting out the segments, but that would create some waste and it is not easy for my shaky hands. I cut it in half first, cut each half into 3 wedges, then cut each wedge into 3 pieces.
- 4
Add the Orange pieces to the Carrot, squeeze out all the juice from the removed peel, and mix to combine. You can serve the salad immediately, but I recommend to leave it in the fridge for at least 15 minutes before serve.

I love carrot salad. So, I mixed in some ingredients that I thought would go well with it.I used green apples in this recipe. Apples from England are only about the size of your palm, but if you use Japanese apples, use 1/3-1/2. Recipe by KT121 cookpad.japan -
Tangerine Garlic Mustard Salad dressing Tangerine Garlic Mustard Salad dressing
My hubby and I love to eat salads. But I never keep any salad dressing from the store. Firstly, I don’t use salad dressing from the store. Secondly, it’s too oily and also not really in my taste. Even we go eat out, whenever I order salad, the salad dressing will always on the side, and I will never pour or use it on my salad. So the question is, what usually I use to dress up my homemade salads at home? Usually I just simply using squeezing lemon juice, salt, and black pepper. Or sometimes I am using balsamic vinegar, or I made my own salad dressing. Today I am going to share my favorite citrus salad dressing using tangerines juice. And here is the recipe. Nia Hiura -

One beautifully ripe pineapple, some gorgeous looking but pretty tasteless strawberries and fresh ahi made a colorful salad. Pea Sprout & Carrot Salad Pea Sprout & Carrot Salad
I really love this "Pea Sprout & Cabbage Shio-koji Salad",. I thought the pea sprouts would taste delicious with some other fresh and simple ingredients, so I made this recipe with a couple adjustments to the seasoning.Carrot peel contains lots of carotene which supposedly helps to prevent cancer!I recommend using unpeeled carrots with a smooth and clean skin. The carrots do contain an enzyme that destroys Vitamin C, but if you heat them up or sprinkle some lemon juice or vinegar over them it seems to keep the enzyme at bay. For 2-3 servings. Recipe by uzu1118 cookpad.japan -

Fennel and Turnip Salad Fennel and Turnip Salad
I made this because I received some organic fennel leaves.Use fresh turnips and mushrooms. You could mix it with some pre-prepared dressing later, but for this salad, I think it's best to mix it all together with the dressing in a bowl. If you dress it directly in the bowl, coat with some oil first so that it doesn't become watery. Recipe by Asaras cookpad.japan -
Ham and Red Cabbage Salad Ham and Red Cabbage Salad
I recreated the salad that's sold at the deli counter in a certain department store food hall. I think that they use red onion rather than regular onions, and chicken rather than ham, but I adapted it to use ingredients that I can easily get at our neighborhood supermarket. If the salad is lacking in tartness, add a little lemon juice or vinegar. You can use any type of ham you like, but I recommend pastrami. Recipe by r2230 cookpad.japan
