Crunchy Mini Nut Tarts
I created this recipe because I love snacks made with nuts. They're easy to carry, so they'll make the perfect gift.If you don't hurry, the filling will get hard during Step 7. Keep the frying pan over a very low heat and pour it quickly into the tart base.I used walnuts, almonds, hazelnuts, and pumpkin seeds this time. It's hard to cut into slices, so I recommend making it into small tarts. Chestnut Tart
I saw a chestnut tart in my neighborhood bakery that looked really good, but I thought I could make it myself. I combined almond and chestnut cream for a double nutty kick.I used Bonne Maman's creme de marron (chestnut cream). The cream is sweet, so I held back on the sugar. While baking, keep an eye on it and adjust the temperature as necessary. The tart will easily crumble while hot, so make sure to completely cool before taking out of the pan. Recipe by Yossy

Mint Cream Tarts
Cool. Creamy. Refreshing and easy to make. Individual mint cream tarts are really festive and can be made ahead . If you don’t have individual spring form pans a 8 inch one or 8 inch cake pan will also work although the cake pan will have to be cut in the pan.

Hazelnut Rum Tart
The opportunities to make delicious things for Christmas or New Years are going to be multiplying from here on out. I thought of this dessert recipe which uses a lot of rich hazelnuts instead of lots of sugar. Please grease the pan and dust it with flour in advance if you feel that it is necessary. Please adjust the baking time to suit your oven. Pineapple Tarts
Chinese New Year is fast approaching and pineapple tarts are popping out everywhere if you are residing in Singapore. This year, I decided to make my own with a bit of old and new. I had been experimenting on these tarts for a couple of days and old is using a traditional recipe (which is from my grandma). New is going an unorthodox route with a French pastry as the base.I personally dislike the base. I find the cookie base crumbly and lack flavors without much texture. The pineapple jam is also a bit too sweet and doesn't have much of a chew. After much experimenting, I finally settled for a reduced sugar pineapple jam and a very underrated pastry, sablé breton, as the base. I can finally taste the pineapple's tartness as well as an aromatic cookie base.Even tho they look more rustic, but they are just the way I wanted them to be. The downside is the cookie base dough has to be parbaked be4 molding into individual tarts. This means the leftover cookies cannot be reused. You can bake the leftover and consume as it is or blitz them into powder and use it as garnishes for ice cream or any desserts. But I didn't stop here. I still feel that there is a lack of something and so I improvised. I had included the extra steps in the directions below. You can totally skip the extra steps and the tarts will still taste great. On a last note, do taste and adjust the amount of sugar that you are gonna add. Some pineapples are sweeter and some are sour.
