Start with the filling so it can cool down. Finely chop the onion and bell pepper, mix with beef fat and salt, and sauté well. Add spices and finally the shredded carrot. Sauté a little more and then turn off the heat.

Knead the dough, leaving it a bit sticky for successful batbout. Let it rise, then divide it into the desired size.

Roll out a ball of dough slightly, add the filling and cheese, and gather the edges at the top as shown in the picture.

Press the dough until the filling starts to show, let it rise for 10 minutes, and then start cooking in a heavy skillet like the one used for flatbreads. Serve it with a cup of sweetened tea or dates. Enjoy your meal!
