Ingredients

  1. Sambhar masala
  2. 1 Tbspcoriander seeds
  3. 1 Tbspcumin seeds
  4. 5/6whole red chillies
  5. 1 TbspUrad dal
  6. 1 TbspChana Dal
  7. 1 tspfenugreek seeds
  8. 2 Tbspgrated coconut
  9. 1 tsphing
  10. 1/4 cupwater
  11. 1 Tbspoil
  12. Dal
  13. 1 cupTuvar Dal
  14. 1 tspred chilli powder
  15. 1/2 tspturmeric powder
  16. 1/8 tspsalt
  17. 1 cupwater
  18. Sambhar
  19. 2 cupscooked Tuvar Dal
  20. 2 cupswater
  21. 2/3drumsticks cut into 1”
  22. 1/2pumpkin cubes
  23. 1/2eggplant cubes
  24. 1medium size carrot cubes
  25. 1 Tbspjaggery powder
  26. 1 Tbsptamarind pulp
  27. 1/8 tspsalt
  28. 1/2 cupprepared sambhar masala

Cooking Instructions

Prep time -10 mins, Cook time - 20 mins

    Sambhar Masala - In a pan heat oil, add cumin seeds, coriander seeds, fenugreek seeds, whole red chillies, Urad dal and Chana Dal and roast for 2 mins, add grated coconut and hing, stir, add water and stir. Set aside to make a mix, Sambhar masala is ready

    Tuvar Dal - in a pressure cooker add Tuvar dal, water, salt, turmeric powder and red chillies powder, pressure cooker add for 8 whistles, depressurise and dal is ready

    Sambhar - in a recent an add water, add pumpkin, drumsticks and cook for 6 mins, add Tuvar dal, tamarind pulp and cook for 2-3 mins. Add eggplants, carrot and cook for 5-6 mins

    Add jaggery and salt and mix and cook until desired consistency is reached. Set aside

  5. 5

    Serve with rice and enjoy
