Sambhar Masala - In a pan heat oil, add cumin seeds, coriander seeds, fenugreek seeds, whole red chillies, Urad dal and Chana Dal and roast for 2 mins, add grated coconut and hing, stir, add water and stir. Set aside to make a mix, Sambhar masala is ready

Tuvar Dal - in a pressure cooker add Tuvar dal, water, salt, turmeric powder and red chillies powder, pressure cooker add for 8 whistles, depressurise and dal is ready

Sambhar - in a recent an add water, add pumpkin, drumsticks and cook for 6 mins, add Tuvar dal, tamarind pulp and cook for 2-3 mins. Add eggplants, carrot and cook for 5-6 mins

Add jaggery and salt and mix and cook until desired consistency is reached. Set aside

Serve with rice and enjoy
