Lamb curry with red Thai curry paste

This is a quick dinner I made at home with ingredients I had. I switched normal curry to Thai curry red paste and it came out delicious. Serve with rice or sweet potato mash.

This is a quick dinner I made at home with ingredients I had. I switched normal curry to Thai curry red paste and it came out delicious. Serve with rice or sweet potato mash.
Cooking Instructions

Cut onions in chunks and cook in pan with butter until soft

Brush your lamb cubes with turmeric and add in pan. Brown both sides.

Add red Thai curry paste, 100 ml hot water and cook on medium heat for 30 min. Stir occasionally. After 30 min, add all your other spices, and cook for 10 more minutes covered until sauce is reduced.

Serve on rice or sweet potato mash with coriander and a splash or lemon and enjoy!

I've been addicted to this dish since I travelled to Thailand a long time ago. I rearranged the recipe on the package of ready-made curry paste. My American husband prefers this to Japanese-style curry.Basically you can use any vegetables. You can substitute chicken with shrimp. Sprinkle on chopped cilantro as a topping if you like.
