Soaked garri and groundnut

Garri can be eaten without further cooking, as a snack, by placing it in a bowl and adding cold water; ijebu-garri is made to have finer grains, and a pleasantly sour taste, making it very suitable to be eaten in this way. Sugar or honey is then added as well as chunks of coconut, groundnuts, tigernuts and cashew nut.
This is one of the quintessential Nigerian snacks/meals/drinks (yes, all in one). I never went through the boarding school experience in Nigeria but apparently, having a stash of garri was essential to surviving those long weeks away from home. As a day student, that didn't stop me from overloading on soaked garri after school.

Lemon-Simmered Chicken Tenders Lemon-Simmered Chicken Tenders
I loved this lemon-simmered chicken in my school lunch as a student. I never missed a day of school when it was on the menu. Since I can't eat school lunches, I recreated this dish.Be sure to dust off any excess flour. If there's too much it thickens the sauce. When heating the sauce, once it starts to bubble, add the chicken. If you overcook it, the lemon flavor will be lost. For 5. Recipe by mowmuu cookpad.japan -

Sourdogs Sourdogs
Sourdogs came about when I was still in school. I love whole grain mustard and pickle sandwiches. I would eat them when I came home from school. Then one day I added a hotdog, the rest is history. I still eat just the mustard and pickle sandwiches. I love the whole grains popping in my mouth as I eat it. skunkmonkey101 -

French Toast You Can Even Make on Busy Mornings French Toast You Can Even Make on Busy Mornings
So that even my junior high school student daughter can make it, "Mix everything in Step One" is an easy way to remember. If you use bread that has gone a little stale, you can kill two birds with one stone.I wanted to have some french toast that was flavorful all the way to the center, so I used the thinner sliced bread from a 6-pack (a 5-pack is also okay) so it can absorb the egg mixture quickly.Use whatever kind of bread you like, but when you're busy, I recommend the 6-pack bread. Egg & Lentil Curry Egg & Lentil Curry
I love Delia Smith's recipes. This recipe is based on one of her recipes (from her Vegetarian Collection) that I cooked so many times I learned it by heart. It was my husband's favourite meal, but it had loads of ingredients. Now I have less time to make it, I decided to strip it back. It still tastes good, maybe not as complex as Delia's, but a pretty good copy. *Lime pickle is an Indian condiment, which should be available to buy from Asian grocers. Celeste
