This Indonesia cuisine has existed since time is not independent, since this is a food freedom fighters here. This recipe I can from my deceased grandmother, along with other traditional recipes. Materials and practiced how to make it easier ... can be enjoyed while relaxing or as a fun preparation with family.

KENCUR (Kaempferia galanga L.) is one type of medicinal plants belonging to the tribe- finding (Zingiberaceae). Rhizomes of this plant contain essential oils and alkaloids are used as a stimulant. Kencur name borrowed from Sanskrit, kachora, कचोर, which means white meeting (Curcuma zedoaria).

Other names are cekur (Malaysia) and pro hom (Thailand). There is also a close relative kencur commonly grown in the garden as a medicinal plant, meeting Rapet (K. rotunda Jacq.), but easily distinguishable from the leaves.
In the international literature (English) often causes confusion by calling kencur as lesser galangal (Alpinia officinarum) and zedoary (ginger and white), which is actually a different species and is not substitute to the spice.

Ingredients

  1. 350 grcassava, boiled
  2. 75 grtempeh, finely chopped
  3. 1leek, thinly sliced
  4. Oil for frying
  5. GROUND SPICES
  6. 3 clovesgarlic
  7. 1red onion
  8. 3red peppers (to taste)
  9. 2lime leaves
  10. 1 pieceKencur (size of the tip of a finger)
  11. Flavoring ( optional )
  12. to tasteSugar and salt

Cooking Instructions

    Puree cassava and mix with chopped tempeh and leek in the bowl.

    Add the ground spices and mix well, then shape the dough into oval.

  3. 3

    Fry all the dough until golden, drain.

  4. 4

    Ready to be enjoyed with green sauce or cayenne pepper.
