Frozen Key Lime Pie

Ingredients

  1. For the Crust
  2. 10graham crackers, crushed
  3. 6 tablespoonsmelted butter
  4. 1/4 cupgranulated sugar
  5. For the Filling
  6. 1 cansweetened condensed milk
  7. 2 tablespoonsgrated lime zest (plus 2 tsp)
  8. 3/4 cupfreshly squeezed lime juice
  9. 6egg yolks
  10. 1/4 cupsugar
  11. 1/2 teaspoonsalt
  12. Topping
  13. 1 pintheavy cream
  14. 1 tablespoonvanilla
  15. 1/4 cupsugar

Cooking Instructions

    Add yolks and sugar to bowl of stand mixer. Beat on medium high for 3 minutes. Add lime juice, zest and condensed milk. Mix until combined.

    Mix graham cracker crumbs with sugar and melted butter. Press into deep dish 9 inch pie plate. Bake at 400 degrees for 10 minutes. Let cool completely.

    Add filling mixture to crust. Whip cream with sugar and vanilla. Add half whipped cream to top of pie and smooth. Cover and freeze for at least 4 hours until thoroughly frozen.

    Top with extra whipped cream, garnish with lime slices and grated zest.
