Easy Tomato and Basil Bread

Lovely recipe from the 90's Family Circle. Can have a slice (or two) whenever you want!
Cooking Instructions

Preheat oven to 180C
- 2
Cream butter, tomato paste, brown sugar and eggs
- 3
Sift together flour, baking powder and bicarbonate of soda; stir in dried basil
- 4
Gradually stir in creamed mixture into dry ingredients with tomato juice; dough may appear wet and sticky. Fold in the shredded Cheddar

Spoon into lightly greased 15x21cm loaf tin (I prefer baking paper)

Bake in oven for 40-50minutes or until skewer comes out clean. Serve warm or cooled with soups, casseroles, et cetera

I know Focaccia calls for a generous amount of olive oil added to the dough and the topping as well, but the end results are awesome. Olive oil infused with garlic and herbs takes the bread to an another level. Although I have used dried herbs in my recipe but you can use fresh herbs depending on the availability. I have used fresh basil leaves in the recipe and let me tell you it smells and tastes amazing and it goes well with the cherry tomatoes.

I rearranged a recipe to use a bread maker to make 1.5 loaves.Don't slice the bread until it has cooled completely. Use a knife in sawing motions to slice it neatly. It will slice neatly if you wipe the blade clean after each slice. (My co-worker taught me that). Recipe by Ginnane
