Ingredients

  1. 125 gramsbutter
  2. 1 tbsptomato paste
  3. 2 tbspbrown sugar
  4. 2eggs
  5. 2 cupplain flour
  6. 1 tspbaking powder
  7. 1 tspbicarbonate of soda
  8. 2 tspdried basil
  9. 1/4 cuptomato juice (or diluted tomato paste)
  10. 1 cupshredded Cheddar

Cooking Instructions

    Preheat oven to 180C

    Cream butter, tomato paste, brown sugar and eggs

    Sift together flour, baking powder and bicarbonate of soda; stir in dried basil

  4. 4

    Gradually stir in creamed mixture into dry ingredients with tomato juice; dough may appear wet and sticky. Fold in the shredded Cheddar

    Spoon into lightly greased 15x21cm loaf tin (I prefer baking paper)

    Bake in oven for 40-50minutes or until skewer comes out clean. Serve warm or cooled with soups, casseroles, et cetera

It turned out great. Much, much better than I expected. It's a great change to the typical quick-breads. I chose to omit the cheese (I don't care for cheese in breads) and added a little more basil and ended up loving the flavor. Great by itself or with a little butter/margarine on top.By the way, 180°C is approximately 355°F and 4oz is 1/2 cup.
