Ingredients

  1. 2eggs
  2. 1 tbspolive oil
  3. 1 smallto medium tomato
  4. 1salt&pepper to taste
  5. 1 tsporegano (optional)

Cooking Instructions

    Beat the eggs in a bowl and chop the tomato.

    Heat a small frying pan and add the olive oil. Once the oil has heated add the tomatoes and cook for half a minute.

    Add the eggs to the pan and lower the heat. Fold the eggs using a wooden spoon until set. Add salt&pepper and the oregano (optional).

  4. 4

    Serve with warm arabic bread or toast.
