Crockpot Loaded Cornbread Casserole

#CA2025 I found the recipe while cruising thru FB. Oven bake or use crockpot. Crockpot recipes are great when it is too hot or inconvenient to use the oven. The recipe called for Little smokies cocktail sausages but I found it to make a more substantial meal with a ring of smoked sausage. NOTE: When the crockpot is finished remove lid and allow to sit for 15-30 minutes to firm up or you will have cornbread slop.

Ingredients

2 hrs on high 3-4 on low
6-8 servings
  1. 1 packagesmoked sausage sliced or you can use a package of lil smokies
  2. 1 (15 ounce)can creamed corn
  3. 1small can green chilies (if you want spicy use small can diced jalapeños)
  4. 1 (15 ounce)package Krusteaz Southern Cornbread mix
  5. 2eggs lightly beaten
  6. 1 cupmilk
  7. 1 1/2 cupsshredded cheese

Cooking Instructions

    Spray inside of crockpot with cooking spray.

    Slice the roped sausage and place in bottom of crockpot.

    Add can of creamed corn over sausage and can of green chilies over corn.

    Empty cornbread mix in separate bowl, add milk,eggs and mix throughly. Pour in crockpot. Add cheese and fold all ingredients together.

    Cover and cook on high (depending on your crockpot) 1 1/2 -2 hours on high or 3-4 hours on low until cornbread is cooked thru out. You can also bake at 375 degrees Fahrenheit for 30 - 35 minutes. Remove lid from crockpot and let rest or it will be soupy like picture below.
