Ingredients

  1. 1Coconut milk
  2. 1chopped onion
  3. 1Mushrooms
  4. 1Shrimps
  5. 1chopped parsley
  6. 1Noodles
  7. 1Chopped carrots
  8. 1Assorted Spices
  9. 1cornstarch
  10. 1Chili Peppers
  11. 1fresh lemon juice
  12. 1ginger

Cooking Instructions

    Fry onions, peppers and mushrooms in oil

  2. 2

    Add coconut milk and carrots

  3. 3

    Add water with about a tablespoon of cornstarch

  4. 4

    Stir occasionally, adding the shrimps when the soup starts to simmer

  5. 5

    Add assorted Spices and ginger. Personally I used lots of rosemary, Chilli powder and curry powder. I also added a dash of nutmeg and cinnamon

    Add noodles to thicken the soup.

    Since coconut soup cooks very quickly take the soup down when you feel it's ready. I let it boil for about 15 minutes.

    Add lemon juice and chopped parsley to garnish
