Ingredients

  1. 1large beet
  2. 1large onion
  3. Pickling brine------------
  4. 2 leafBay leaves
  5. 1 teaspoonkosher salt
  6. 1/2 tablespoonkosher salt
  7. 15 ouncedistilled white vinegar
  8. 3 ounceswater
  9. 2/3 cupsugar
  10. 1-1/4 teaspoonminced garlic

Cooking Instructions

  1. 1

    Heat the water and vinegar. Add 1/2 tablespoons salt and sugar.

    Peel the onion and beet

  3. 3

    Slice the beet and onion. Add to jar with bay leaf, 1 teaspoon kosher salt, and garlic. Pour the hot brine on top and fill to top.

    Add lid and let cool. Then refrigerate overnight and eat at your leisure.
