Warm Vegetable Soup

Cooking Instructions

Wash, peel and roughly chop carrots, onions, garlic and potatoes

Heat oil in a big pot over medium high heat. Sauté onion and carrots until fragrant
- 3
Next, add garlic, the bay leaf and potatoes. Sauté for a minute or so before adding enough water to submerge vegetables. Bring to a boil

Cover with a lid and let simmer for about 20 minutes, stirring every now and then
- 5
Then, add crushed tomatoes, peas, corn and seasoning. Simmer, covered, until potatoes and carrots are fork tender

Serve warm with a splash of tabasco

I lay them flat on a sheet pan and freeze. They take little room in the freezer and thaw quickly. There really aren’t measurements for this recipe. I love soups. When making anything, I try to use as much fresh as possible. Especially Vegetables. Vegetable soup is one of my favorites. I would love to be able to always have it made so I could grab a soup mug or bowl full whenever I like. I always make 5-7 quarts of soup. I keep some out, place some in sandwich Ziplock baggies. I got this idea from watching the create channel on something about cooking. I made my soup with a lot more than the show did. The show did a onion mushroom soup with salt and pepper. I thought it would be a good base but needed lots more. This is the result. qtmonki01
