Ingredients

  1. 1 largeOnion, chopped
  2. 2 clovesGarlic, chopped finely
  3. 1 canChopped tomatoes
  4. 1 or 2Fresh tomatoes, chopped
  5. 4 stickscelery, sliced
  6. 100 gramsChestnut mushrooms
  7. 1 handfulparsley, finely chopped
  8. 4 mediumPotatoes, diced
  9. 1Carrot, peeled and sliced
  10. 1Bay leaf
  11. 1 literChicken stock or broth (use vegetable stock for vegetarian option)
  12. 1Salt
  13. as neededWater
  14. 50 gramsRice
  15. 1 pinchHot paprika
  16. 2 tbspolive oil, extra virgin
  17. 1 cancannellini beans
  18. 1Green pepper, roughly chopped
  19. 50 gramsbroccoli sprouts, cut in half
  20. 1 handfulfresh basil leaves, chopped
  21. 50 gramsfrozen spinach
  22. Parmigiano reggaino cheese

  1. 1

    Heat the oil over a medium heat.

  2. 2

    Add the onion, parsley, bay leaf and garlic and fry for 2 minutes or so.

    Then add the tomatoes, both can and fresh. Simmer for 5 minutes.

  4. 4

    Add the rest of the ingredients, apart from the stock, rice or beans. Mix well regularly for about 10-7 minutes or until the vegetables start to soften.

    Add the stock, and simmer for 20 minutes or until vegetables are all cooked.

    Add the rice, basil and cannellini beans and simmer for a further 15 minutes.

  7. 7

    Check seasoning.

  8. 8

    Let it rest for 10 minutes and serve sprinkled with grated cheese.
