I first had this cake in a Filipino Bakery. I fell in love at first bite. The recipe was taught to me by my friend's Mom who came to the US from "P.I." in the 1950s.

Ingredients

  1. Cake
  2. 2 lbGrated Cassava
  3. 1 1/2 cupshredded Coconut
  4. 4eggs
  5. 3egg whites (reserving the yolks for the topping)
  6. 12 ozCan Evaporated Milk
  7. 14 ozCan Sweetend Condensed Milk (Reserving 1/3 for the topping)
  8. 13 ozCan Coconut Milk (reserving 1/3 of the can for the topping)
  9. 13 ozCream Of Coconut (usually found in liquor store with the mixers) reserving 1/3 of the can for the topping
  10. Topping
  11. 3egg yolks
  12. 1/3 canCoconut Milk
  13. 1/3 canSweetend Condensed Milk
  14. 1/3 canCream of Coconut

Cooking Instructions

    Preheat oven to 350°F

  2. 2

    Mix all cake ingredients together in a large bowl. REMEMBER TO RESERVE YOUR 3 EGG YOLKS AND YOUR TOPPING INGREDIENTS

    Pour mixed cake ingredients into 3 9inch round cake pans.

    Mix topping ingredients in a bowl and set aside.

  5. 5

    Bake Cakes at 350°F for about 30 minutes or just until the tops are firm

  6. 6

    Pull cakes out of the oven and pour topping mixture ontop of each cake.

  7. 7

    Put cakes back into 350°F oven for another 30 minutes until cakes have begun to turn a golden brown around the edges.

    Enjoy! Goes great with coffee.

Wife and Mom of 4 with a bun in the oven. (Due in December) I went to Culinary School in Aptos, California and have worked in several kitchens and for some of the most amazing chefs.
