  1. 16 gramsdried yeast
  2. 18 gramssalt
  3. 30 gramssugar
  4. 90 gramsbutter
  5. 300 gramswater at 14°C
  6. 400 gramsRye flour
  7. 350 gramsbread flour

    pour all ingredients together Into mixer EXCEPT Salt,

    Work with slow speed for 4 Minutes / until it turn into a smooth dough. add in Salt let it continue to work for another 6 Minutes Until the temperature of the dough being rised between 25 to 29°C

    wrap the dough With plastic flim. let it prove for 30 minutes in room temperature

  4. 4

    divide the dough into 3 equal pieces, shape it and let It sit for another 40 minutes.

    preheat Oven at 200°C put in the bread let it cook for 30 minutes
