I'm not the best at cooking so everything I make is easy and beyond tasty! Never made a leek and potato soup before and I mashed several recipes together. Some say add onion. I hate onion so I didn't add it. But you can add a cup in if you want. Same with pepper (add to taste) and maybe try some cheese grated in? Make it your own and don't worry as long as you have leeks and potatoes...it's a soup...

Ingredients

  1. 2garlic cloves- diced
  2. 2celery stocks
  3. 1/4 cupsalted butter
  4. 2 largeleeks
  5. 6 mediumpotatoes
  6. 1 literchicken broth
  7. 1 1/4 cupheavy cream

Cooking Instructions

    Add butter, garlic, celery, and leeks into pot to saute. Medium heat

    Once sauted add chicken broth and potatoes.

    Cook on high heat. Bring to a boil. Turn down to medium. Until potatoes are soft. About 30 minutes.

    Mash/whisk soup or purée. ( If you want more texture then mash is suggested)

    Add cream as you whisk or purée.

    Let reduce for 10 minutes. On low heat.

    Just an additional tip: I made it so the potato to leek ration was about 50/50 in the pot if your wondering what to consider for potato size.
