I've been trying different chocolate cake recipes and came up with this very good one. And since i was lacking some ingredients for the frosting, i just improvised with what's available and voila!

Ingredients

  2. 2 cupAll-purpose flour
  3. 3/4 cupCocoa powder (unsweetened)
  4. 1 tspCoffee powder
  5. 2 cupWhite sugar
  6. 1 3/4 tspBaking powder
  7. 1 3/4 tspBaking soda
  8. 1 tspSalt
  9. 2Eggs
  10. 2 tspVanilla extract
  11. 1 cupMilk
  12. 1/2 cupVegetable oil
  13. 1 cupBoiling water
  14. Frosting
  15. 1 1/2 cupWhipping powder (use only if you have no heavy whipping cream)
  16. 1/3 cupAll-purpose cream (use only if you have no heavy whipping cream)
  17. 3 tbspCocoa powder (unsweetened)
  18. 3 tbspMuscovado sugar (or regular)
  19. 1Chocolate sprinkles
  20. 1Chocolate chips

Cooking Instructions

    Put together all dry ingredients: flour, cocoa powder, coffee, sugar, baking powder and soda and salt. Rake in using a fork or mix through a whisk.

    Add the eggs, vanilla extract, milk and vegetable oil. Continue mixing until all are combined. You may opt to use a stand mixer or hand mixer if you have one.

    Pour in the hot water and mix well into the batter. The batter should look a little think but it'll come out perfect.

    Preheat the oven to 350°F.

    I used a bundt pan and greased it with butter and dusted it with some flour.

    Pour the batter into the prepared pan and bake for about 50-55 minutes. I underbaked a little for a moist cake.

    Once baked, let it cool and we can start with the frosting.

    I can't find heavy whipping cream at our local grocery but i did find an instant whipping powder. Instructions on the package say to mix it with cold water. But instead of using cold water, i mixed it with an all-purpose cream. I used my stand mixer to and started with low speed.

    I melted some chocolate chips too and added to the frosting mixture but this is optional.

    I then gradually added my cocoa powder and sugar.

    I increased the speed to medium-high until the consistency is quite heavy but frothy.

    Spread the frosting to your cake using spatula. I used some chocolate sprinkles and chocolate chips for decoration.

    Chill in the fridge for an hour or so. Serve and enjoy!

I couldn't find coffee powder anywhere at my local grocery store, so I used instant coffee and it was really good!!
