I always find new and creative ways to have health proteins in my diet. Since I started being a vegan and a vegan chef, I had to find good healthy sources of proteins to keep my diet balanced. Avoiding that light headed feeling when you haven't had your protein fix for the day. So with this recipe it combines the fresh taste of coriander with the umami taste of the tomatoes and that hearty rich flavor of the chickpeas. Ingredients

  1. 1/2 cuptomatoes chopped
  2. 1/2 cupchickpeas
  3. 1/2onion, chopped
  4. bunchcoriander
  5. salt and pepper
  6. tbsplime juice
  7. 1/4 cupgrated cheddar
  8. tbspgarlic oil
  9. 4 slicewhole wheat bread

Cooking Instructions

  1. 1

    Pan toast the pieces of bread until golden. Once golden drizzle some garlic oil; sprinkle on the cheese and take it off the flame and set aside. On a bowl add the onions, tomatoes, coriander, salt, pepper, lime juice, and chickpeas. Mix well until well incorporated. Top the toast with this mixture. And Enjoy!
