I used Italian diced tomatoes instead and next time I'm going to add more broth and noodles. Probably double the recipe too! Other than that; fast, easy, scrumptious and great for a weeknight dinner!!

Ingredients

  1. 1 lbGround Beef
  2. 2 cupFrozen Mixed Vegetables
  3. 1 can(14 1/2 ounces) Diced Tomatoes (undrained)
  4. 1 can(14 1/2 ounces) Beef Broth
  5. 1/4 tspPepper
  6. 1/2 cupUncooked Elbow Macaroni

Cooking Instructions

    In a large saucepan, cook beef over medium heat until no longer pink; drain.

    Stir in the mixed vegetables, tomatoes, broth and pepper. Bring to a boil; add macaroni.

  3. 3

    Reduce heat; cover and simmer for 8-10 minutes or until macaroni and vegetables are tender.
