Tinolang Manok (Filipino Chicken soup in ginger and veggies)

All time favorite Filipino dish. Its like a one dish-meal, with meat, veggies, and soup all together. Can be served with rice or just eat it like that!
Cooking Instructions

In a medium sized pot, saute ginger till golden brown followed by garlic and onions. Then put the chicken, patis, and pepper and simmer for 5 minutes.

Put the chicken stock and the papaya. Simmer in medium heat for 15 minutes or until the chicken is tender.

Then lastly, put the chili leaves (or spinach). Turn off the stove and cover for 3 minutes. Do not over cook the veggies. Serve with hot, steaming rice. Enjoy! :)

Soto Ayam (Indonesian Yellow Chicken Soup)
‘Soto’ is a traditional Indonesian soup. There are many different kinds of soto. One of favorite is called ‘Soto Ayam’ from Surabaya, the capital city of East Java. It has yellow color broth and is composed of chicken meat, mung bean vermicelli, hard boiled eggs, and topped with koya (a powder of mixed prawn crackers and fried garlic). Turmeric is added as one of the ingredients to get the yellow color of the chicken broth. I decided to try something new and ordered the lemon chicken from a Chineese restaurant, it was really good. I really like soup and was looking up lemon chicken soup recipes, they all involved a croc-pot. I am not a big croc-pot user, so I decided to try to come up with something inspired from the recipe i saw online. I saute the vegetables before putting in soup to save time. It came out very good. I also like to cook chicken myself & not use rotisserie chicken from the store in soup.
