Refreshing chicken Soup!

Very refreshing, tangy chicken soup! Couldn't get enough whenever my dad made it for dinner. Some times ill add rice to the soup to make it more filling :)
Cooking Instructions

Bring medium pot to a boil. Add ginger, lemongrass (chopped into thirds), onion, and garlic.

While pot is boiling, remove skin from chicken thighs and thickly chop. Cut as much meat from the bone of each thigh piece. Also thickly cut chicken liver in large chunks or keep whole. (Optional: cut chicken hearts in half but i usually keep them whole.) Add everything to pot including bones.

While stirring, add msg and powdered chicken boullion. Let simmer for 10 mins. Then add lime leaves.

Cut scallions into thirds and add to pot. Also add fish sauce to taste. Simmer for about 15 mins and add straw mushrooms on top. Enjoy!
