Ingredients

2 servings
  1. 4Chicken thigh (cut in stripes)
  2. 1 canCoconut milk
  3. 2 bunchBak choy
  4. 1 bunchSpinach
  5. 3Red chillies (shredded, but leave 2 uncut)
  6. 1 boxShitake Mushroom
  7. 1 tbspFish sauce
  8. 3 smallLime leaves (shredded)
  9. 1Chicken stock

Cooking Instructions

    Heat the chicken stock in a big pot with chilli, coconut milk, mushrooms, lime leaves.

    Once it's boil, add chicken in and simmer for 15 mins

  3. 3

    Once chicken is cooked, add fish sauce, bak choy and spinach in and cook for another 2 mins.

    Done and serve with rice.

Living in Dublin with my Irish partner who is celiac. My recipes are Gluten Free (GF). Most of my recipes are Asian food and I use soya sauce a lot in them. Regular soya sauce is not GF, but you can get GF one from supermarkets.
