I could never figure out how to cook those thin pork chops that were always on sale at my local meat counter. Finally I got a basic recipe from my Aunt Rita and "jazzed" it up a bit. All I hear from my family is silence when I serve these. Even my picky toddler asks for seconds!

I could never figure out how to cook those thin pork chops that were always on sale at my local meat counter. Finally I got a basic recipe from my Aunt Rita and "jazzed" it up a bit. All I hear from my family is silence when I serve these. Even my picky toddler asks for seconds!

Ingredients

30 mins
4 servings
  1. 8pork chops (boneless, thin)
  2. 2eggs whisked
  3. 2 tbspmustard ( I use dijon)
  4. 2 cupbread crumbs (I use unseasoned)
  5. 1/4 cupdry ranch seasoning
  6. 1/2 cupparmesan cheese from a can
  7. 1oil to coat fry pan

Cooking Instructions

    Rinse and dry pork chops

  2. 2

    Whisk eggs and mustard. Coat chops in mixture.

  3. 3

    Mix the cheese, crumbs and ranch. Dredge each chop in crumb mix and cover evenly.

    Heat oil til a drop of water sizzles. At that point GENTLY slide 3-4 chops into frying pan. Don't crowd the pan. Fry chops on medium heat 3-4 minutes each side.

    Let cool slightly and watch them disappear!

Trying to cut back on frying. Baked it instead at 350 for 45 on a cookie pan that I sprayed with a little oil. Chops fell apart in your mouth. Highly recommend.
