I discovered this recipe when I moved to New Orleans fourteen years ago. It is one of my go-to dishes when I don't have a lot of of time to cook and it always goes over well at a pot luck.

Preheat oven to 350°
- 3
Brown the sausage in a large skillet over medium heat. Remove the cooked sausage and set aside.

Add the onion, celery, bell pepper, and garlic to the skillet and saute until the onions are translucent.

Add the sausage back to the skillet and add the cream of mushroom soup, cream of chicken soup, salt, Tabasco, and rice. Stir to combine well.

Spoon the rice mixture into a greased casserole pan. Cover with aluminum foil or lid and bake for 1 hour.

Allow to rest for 15 minutes and serve hot

A fusion recipe with Indian flavor. Instead of parsley I added coriander. Cajun rice is also popularly knows as dirty rice as the meat and fishy sauce included give the rice a dirty brown color. Firstly, you may notice a difference in my recipe in contrast to the "traditional" one. Chicken giblets are bit rich for my palette and the chicken thighs to me are a better substitute and still make it "dirty". We don't have the same type of sausage (Andouille) that we get in Texas/Louisiana here in New Zealand, so the mince is a nice substitute and the shrimp (prawns)...well why not?!? Red Beans and rice is a Cajun dish that used to be cooked on wash day. It's a meal you put on and slow cook for hours that way you can take care of the laundry! These days it is still a major part of Cajun cuisine. When money is tight I cook this using just 2 lbs of Manda sausage instead of using andoullie & Sausage.
