Sriracha and Bacon Potato Salad

Ingredients

8 servings
  1. 3 lbpotatoes, peeled and cubed
  2. 2 1/2 tbspwhite vinegar
  3. 1/4 tspsalt
  4. 3/4 cupmayonnaise
  5. 1/4 cupsour cream
  6. 2 tbspsriracha chili sauce
  7. 1 eachonion, small and chopped
  8. 6 eachbacon slices fried crisp
  9. 1/4 cupchives, chopped
  10. paprika

Cooking Instructions

30 mins
  1. 1

    Bring a stock pot of water to a boil and cook your potatoes to fork tender.

  2. 2

    Drain the potatoes well and cool a bit

  3. 3

    Add the next 6 ingredients to potatoes and mix well.

  4. 4

    Top with crumbled bacon, chives and paprika

  5. 5

    Refrigerate until serving
