I had extra apples around and wanted to make a cake, so I researched apple cake recipes, combined a few and came up with this. It's very moist and tasty.

Ingredients

  1. 1 1/4 cupbrown sugar
  2. 1/2 cupvegetable oil
  3. 1 cupbuttermilk (or sour milk made with vinegar & milk or plain yogurt & milk
  4. 1 tspbaking soda
  5. 1 tspvanilla
  6. 1 tspground cinnamon
  7. 2 1/2 cupall purpose flour
  8. 1 1/2 cupchopped apples (approximately 2 apples) cored & seeded skin on
  9. 1/2 cupwhite sugar
  10. 1 tspcinnamon
  11. 1 tbspbutter or margarine
  12. 1 tbspflour
  13. 1egg beaten

    Preheat oven to 350°F.

    In a large mixing bowl, combine brown sugar, oil, buttermilk, baking soda, vanilla, 21/2 cups flour, egg and cinnamon. Mix well then add in the apples.

    Pour batter in pre-greased 13"x9" pan.

    In a small bowl combine 1/2 cup sugar, cinnamon, butter & 1 Tbs. flour to make topping. Sprinkle topping evenly over batter.

    Bake in preheated oven for approximately 45 minutes or until knife inserted in middle of cake comes out clean.
