****warning******* if you use little packs of chilli seasoning or make chilli using ketchup, don't try this recipe, Its going to a bit too much flavor for you.

I worked at Hooters years and years ago and this is the same chilli they won awards with. The only difference is if I don't have green peppers I don't add them. In fact it kinda makes it a bit bitter with them.

Ingredients

  1. 2 tbspolive oil
  2. 1onion, chopped
  3. 2 lb80/20 ground beef
  4. 4 clovegarlic
  5. 1 tspfresh black pepper
  6. 1 can14.5 oz fire roasted diced tomatoes
  7. 2 can14.5 oz dark kidney beans
  8. 1 can 15 oz tomato sauce
  9. 1/4 ozcomino seed "cumin"
  10. 3 dashpaprika
  11. 3/4 tbsplight chilli powder
  12. 1/2 tbspdark chilli powder
  13. tbspbeef base

Cooking Instructions

    Add Olive oil to a hot pot and salute your onions

    Add your 80/20 ground beef and cook till most of the pink is out and add your black pepper and minced garlic and cook for 3 mins

    Add your tomatoes and beans and all the dry spices and mix well

  4. 4

    In one of the cans add hot water and the beef base and mix till dissolved and add to the pot

  5. 5

    Turn the heat down to low and simmer for 3 hours, while skimming the fat off as you check it every now and then

    Taste the chilli and add more chilli powder if needed

    I toast my cumin before I grind it to bring out the flavor more and if you want the chilli heated up you can throw a few serrano peppers with a star cut on the tip of them, this will give it heat in the back of the throat but not burn the Hell out of your mouth
