Ingredients

  1. Spices/ Chermoula ---------------
  2. 1 teaspoonground Hungarian paprika
  3. 1/2 teaspoonground ginger
  4. 2 tablespoonschopped parsley flakes
  5. 1 teaspoonchopped cilantro
  6. 1/4 teaspoonground cumin
  7. 1/4 teaspoonground turmeric
  8. 10threads of crushed saffron
  9. 1/4 teaspoonkosher salt
  10. 1medium onion diced
  11. To tastecayenne pepper
  12. 1/4 teaspoonground black pepper
  13. Chicken----------------
  14. 1/4 cupextra Virgin olive oil
  15. 1preserved lemon see my recipe or you can buy them
  16. 1-1/2 poundchicken breast boneless and skinless
  17. 1large English Cucumber sliced
  18. 1/4 cuppreserved lemon juice
  19. 1/2 cuphoney
  20. 1 cupgreen olives sliced

Cooking Instructions

  1. 1

    Mix the spices and herbs with the onions in a bowl set aside.

  2. 2

    Heat the oil and sauté the chicken on both sides for about 3-4 minutes per side.

    Move the chicken to the Chermoula mix in the bowl, and coat the chicken.

  4. 4

    Deglaze the pan with the lemon juice.

  5. 5

    Slice the preserved lemon into thin strips remove any seeds

  6. 6

    Add the olives, and lemon to the pan, along with the Cucumber and honey.

  7. 7

    Add the chicken back into the pan, along with all the Chermoula mixture.

  8. 8

    Simmer for 15-20 minutes turning the chicken on occasion.

  9. 9
